Eat Flax Seeds and Lose More Weight

Flax seeds help to stabilize your blood sugar, which keeps cravings and false hunger in check. When ground flax seeds are added to a meal, you get full faster, and stay full for a longer period of time. They are rich in omega 3 fatty acids, which protect our cell membranes by allowing the good nutrients in and getting rid of waste.

Purchase pre-ground seeds, or better yet buy a coffee mill and grind your own. Whole flax seeds are indigestible. Store your ground flax seeds in the refrigerator to slow the oxidation process.

Almond Coconut Melties

¼ c almond flour or meal
¼ cup cornmeal
¼ cup whole grain spelt flour
½ cup unsweetened shredded coconut
Pinch sea salt
¼ cup coconut oil (unrefined, cold pressed, extra virgin and/or raw)
¼ cup brown rice syrup
1 tablespoon maple syrup
½ teaspoon vanilla extract
½ teaspoon almond extract
1 tablespoon ground flaxseed mixed in 2 tablespoons water, to form a paste.

Preheat oven to 350 degrees.

In a large bowl mix together the almond meal, cornmeal, spelt flour, shredded coconut, and salt.

In a separate bowl mix together the coconut oil, rice syrup, maple syrup, vanilla and almond extracts, and the flax paste.

Add the wet ingredients to the dry, and mix until just fully incorporated. Do not overmix.

The batter will be sticky. Spoon small tablespoons onto a greased cookie sheet, and with wet hands slightly flatten down with your palm so it’s a disc, and not a ball. Leave at least one and one-half inches of space between cookies as they will spread.

Bake for 8-10 minutes, until edges turn slightly golden in color.
