

Veggies from my garden: Kale, Mint, and Chives.
I did not plant from seed, but purchased small organic plants. All I had to do was dig a hole in the ground and place them in. Then I gave them some organic fertilizer I purchased at the garden store. Easy!
Kale: Pull only the outer leaves from the kale plant and you'll have it all season!
Mint: I make ice tea with 1/2 apple juice and 1/2 tea, then add fresh mint.

Here is one of my favorites to get you started:
Creamy Spring Pea Soup
• Heat 2 tablespoons oil in a medium skillet
• Add 1 chopped onion
• Add ½ teaspoon sea salt.
• Stir and reduce heat to low. Cook, stirring occasionally, until onions turn light golden brown, about 40 minutes.
• In lightly salted water quickly blanch about ½ of a bag of green peas.
• Add blanched peas to a blender with the sautéed onions. Blend with unsweetened soymilk, vegetable stock, or water until your desired consistency is reached.
• Season with salt and pepper to taste.
Get Happy with a Springtime Smoothie
It’s a great time of year for smoothies, which you can jam-pack with powerful antioxidants.
1. Start with a base: soymilk, apple juice, orange juice, coconut milk, or water
2. Add Fruit: fresh or frozen: berries, bananas, mango, pineapple, melon, etc.
3. Add Power: dinosaur kale leaves, spirulina powder, bee pollen, goji berries, blueberries, coconut, maca
4. Optional Flavor/Nutrient Enhancers: almond butter, peanut butter, coconut oil, vanilla bean, cocoa powder
5. Here’s a favorite: almond milk + blueberries + banana + dinosaur kale + peanut butter
