Dairy Free Cilantro Sour Cream Dip

Cilantro Sour Cream Dip
Puree the following in a blender or food processor:

1 block firm tofu
1 tablespoon soy sauce, tamari, or shoyu
1 tablespoon umeboshi vinegar (or use the juice from ½ of a lemon with 2 teaspoons soy sauce)
2 teaspoons mustard

Blend until creamy and smooth.

Add ¼ cup chopped fresh cilantro and pulse until combined.
