
Black Bean Mango Salad
- 1 can black beans, rinsed
- 1 mango, chopped
- 1 handful cilantro, chopped
- 1 red pepper, chopped
- 1 tablespoon finely chopped red
onion
- Few pinches sea salt
- Juice from 1 lime
In a large bowl mix all ingredients
together.
Serve as a dip for chips, as a side
salad, or over spooned over brown rice.

- 2 cups milk, soymilk, or
almond milk
- 1 banana
- 1 cup fresh or frozen
blueberries
- 1 teaspoon Spirulina
powder
- 1 teaspoon bee pollen
- ½ teaspoon pure vanilla
extract
- 1 tablespoon agave nectar,
optional
Blend on high speed for 1 minute.

Avocado Summer Salad
- ¼ red onion, sliced thin
- 1 garlic clove, minced
- 1 avocado, sliced
- 2 tablespoons extra virgin olive
oil
- ¼ teaspoon sea salt
- Juice from ½ of a lemon
- 1 bunch mixed greens lettuce,
washed
- 2 red radishes, sliced
In a large bowl add onion, garlic,
avocado, oil, salt and lemon. Let marinate for 10 minutes.
Add lettuce and toss well. Add more oil
and salt, if needed.
Top salad with sliced radishes, if
desired.

Mango Breakfast Crumble
- 2 mangos, peeled and chopped into
large chunks
- 1 cup pecans
- 4 dates, pitted and chopped (or use
¼ cup raisins)
- 1 tablespoon ground flax seeds
- ½ teaspoon pure vanilla extract
- 1 pinch sea salt
- ¼ teaspoon ground cinnamon
- 1 pinch ground nutmeg
- 1 teaspoon agave nectar, or to
taste
Set mangos aside in a bowl.
To a food processor add pecans, dates,
flax, vanilla, salt, cinnamon, and nutmeg.
Pulse a few times until mixture takes on
a crumbly texture. Taste. Add agave nectar if desired.
Spoon over mangos and enjoy as a healthy
breakfast or snack.
