
Whole Grain Banana Bread. It's healthy AND delicious!
Ingredients:
2 cups whole grain spelt flour
1 teaspoon baking soda
¼ teaspoon sea salt
1 ½ teaspoons ground cinnamon
¼ teaspoon ground nutmeg
½ cup toasted walnuts, chopped
½ cup maple syrup
½ cup extra virgin olive oil or

coconut oil
2 organic eggs
3 medium sized ripe bananas
½ teaspoon vanilla extract
Preheat oven to 350 degrees.
Oil and lightly flour an 8x8 inch baking pan.
In a large bowl mix together all of the dry ingredients: flour, soda, salt,
cinnamon and nutmeg.
Stir in the walnuts.
In a separate bowl mix together the wet ingredients: maple, oil, eggs, bananas,
vanilla.
Add the wet ingredients to the dry ingredients and stir until just fully
incorporated. Do not over mix. The batter will be lumpy and this is just fine.
Pour batter into the greased and floured pan.
Bake for 30 minutes, or until a toothpick inserted into the center comes out
clean or with moist crumbs.

TIP: You can substitute whole wheat pastry flour for the spelt flour and bake
for 50 minutes instead of 30.
