Carol's Vegan Peanut Butter Cookies, Naturally Sweetened Too!!

Ingredients:

½ cup plus 2 tablespoons all natural peanut butter

½ cup pure maple syrup

2 tablespoons plus 2 teaspoon coconut oil

¾ teaspoon pure vanilla extract

2/3 cup white whole wheat flour

1/3 cup almond meal (if you can’t find almond meal to purchase you can grind almonds in a food processor until finely ground).

1 pinch sea salt

½ teaspoon baking soda

 

With a mixer cream:

peanut butter

maple syrup

coconut oil

vanilla extract

 

In a separate bowl combine:

flour

almond meal

salt

baking soda
