1 ear fresh corn
1 can chickpeas, rinsed
1 roasted red bell pepper, chopped
1 stalk celery, chopped
1 Tablespoon chopped fresh thyme leaves, optional
1 Tablespoon olive oil
1 Tablespoon apple cider vinegar
good pinch sea salt and black pepper
Using a sharp knife shave the corn kernels from the ear of corn. Combine the kernels with the remaining ingredients. Stir well.
Will keep in the fridge for a few days. This also makes a yummy and healthy mid-afternoon snack.
I like to double the recipe so that I have ready to go food in my fridge. Enjoy!
